Our Summer Edition boxes are nearly here, so we thought we'd share a few ideas for ways to use them!

Warm weather, long days and blue skies will make most of us think of one way of cooking - barbeque.  While there is no doubting the joys of 'low and slow' short-rib, braised pork belly or a whole lamb shoulder cooked over the coals, the humble burger or hotdog still have a place in our hearts, particularly if you can't start cooking at 9am! They are also great for any number of people, so perfect for sharing with family and friends or midweek dinners for two.  Here's Jake's menu from a recent barbeque......



The Longtown Legend

Belted Galloway beef burger, Herefordshire cheddar, baby gem lettuce, pickles, home-made burger sauce, brioche bun

Over the Hill

Belted Galloway beef burger, Welsh rarebit, chilli jam, baby gem lettuce, mayo, brioche bun

The Crafty Crackler

Free range Oxford Sandy and Black pork burger, coleslaw, apple sauce, crackling, mayo, brioche bun

The Valle Dorado

Chorizo hot dog, red pepper marmalade, rocket, confit garlic and wholegrain mustard mayo, brioche roll.

While barbeques might be at the forefront of everyone's mind at this time of year, al fresco eating doesn't have to be all about smoke and fire.  Even that bastion of British cuisine, the roast, can be adapted for the summer months with a bit of cunning! The following are side dishes we've found go really well with roasted meats when it's just too nice to eat inside.

Beef - tomato and red onion salad with an oil, vinegar and herb dressing or a Thai-style cucumber salad with beansprouts, red chillies and a lime and fish sauce dressing

Pork - fennel and apple slaw with a creme fraiche and lemon dressing or a rice, bean and pepper salad with a jerk dressing (Jerk seasoning, lime juice, hot pepper sauce, garlic, salt and olive oil)

Lamb - toasted coconut, carrot, red onion, coriander and chilli slaw with a lime juice and toasted cumin seed dressing or warm puy lentils with roasted tomatoes, feta, finely diced red onions and a lemon and olive oil dressing
